This week’s haul was: carrots, tomatoes, salad mix, garlic, kale, peppers, and potatoes.
In what is close to the last installment of all tomatoes, all the time cooking, I made a fabulous uncooked tomato sauce with basil (from the garden) and fresh mozzarella over pasta. It was so pretty with the combination of colors from the heirloom tomatoes last week. I also made these Spicy Chicken Tacos, which were super easy, and used up garden tomatoes and jalapenos, and CSA peppers and garlic.
This week, I was sure we’d have eggplant, so I planned on making this Eggplant and Potato Curry. Naturally, we didn’t get eggplant, so I had to buy that. But I was still able to use garlic, potatoes and a jalapeno from the CSA.
